I’m a disabled woman with cerebal ataxia and dexterity issues myself, and dexterity difficulties is something I take into consideration when reviewing sex toys. I also have a neighbour/friend eith cerebral palsy, so I do know how these things can be a problem for a lot of people.
Unfortunately I haven’t seen a masturbator with bigger buttons on it, which is a shame because like you, I think disabled people should be able to access sexual pleasure with ease.

While I have not seen any the AI assistant or phoning customer support might get you the quickest results.
How are you with smartphones? Does your dexterity issues mean they are not useful? As my alternative option was an app based masturbator you can use on a tablet.
Apart from that @Tenshadesandme suggestion of the pander option is spot on.

Have you tried wands before?
The Doxy wands have fairly large buttons (and the wands pack a punch!!!) But it depends on if you like that sort of stimulation or not. As a bloke, I quite like mine, wand #3 in classy disco black…. Bought for my wife, but too intense for her.

Welcome to the forum! Not sure on toys with big buttons but there are some with remotes and even masturbating fleshlights that have a stroking movement to them… maybe worth having a look at some to see if any tickle your fancy 
Hey, is a scroll type wheel difficult to use? I’m not sure what motion is comfortable for you, but as others have suggested a remote toy is great but they don’t tend to have large buttons.
