It’s lovely, I’ve done it with a leg of lamb and also with diced lamb steak both work well.

It’s so easy. I used tinned tomatoes and ground garlic.
Everyone in my house loves it, no leftovers x

Bit of an experiment tonight, I’m attempting like a rosti kind of thing, served with bacon and poached eggs, and will drizzle over some creme fresh and some chilli jam. To make the rosti’s I’ve cut up and squashed some left over roast potatoes from the freezer, then fried them off with some diced carrot, peas, sweet corn and spring onion, with a bit of smoked paprika and a small amount of chilli flakes. Then when I’m ready for dinner I will mix in a beaten egg to bind them, shape them in to rostis and fry them on both sides until cooked through and crispy.

Went to the local chippy for fish and chips this evening. We’ve eaten terribly this week, with the both of us having annual leave and it being my birthday and lots of socialising. Really must do better next week… for my waistline and my purse :grimacing:

Haven’t eaten anything yet (very unusual) due to a hectic few days with problem-solving head on for work. Issue overcome. Job completed. Coming down off my anxiety high and will soon be slumping into a pizza… sister’s treat.

I’ve got beef curry in the slow cooker, just need to stir in some frozen spinach a couple of hours before it’s cooked. Once cooked it will be split in to portions and frozen. Think we will have some with rice and nann bread one night this week.

We are having turkey fajitas and salad for dinner tonight. The veggies and the turkey are currently marinating in the fridge. Half the cooked mixture will be frozen and then used up over the next few weeks with pasta or rice.
