Chicken in Black Bean Sauce
Last minute change in plan as had some green peppers to use
NOT following BBC recipe 6 tbsp blackbean sauce from jar

Chicken and sweet potato casserole with rice, for us. It has red pepper and mushrooms in too.
We have a new oven and it doesn’t work in the same way as the last one.
Seems to need knocking up to full heat for long time before turning down a notch.
So tonight is an experiment to get to know the oven. All cooked earlier to be heated up on the hob.
Having thought the thing was incapable of cooking anything, I think I went a step too far and now have a casserole which needs a bit of stock / wine adding to it.
Smells nice, tho.

Hey @MsR. Glad you finally have a working oven. They can take a bit of getting used to which is why I think things go so badly wrong sometimes on shows like ‘bake off’. I’m flattered you were interested in my recipe. It’s pretty easy and SO much better than the mushy stuff out of jars, with flavouring and preservatives. Rather than take up a massive space on this thread, I posted an the ‘share images’ topic so it should be there in the morning. If you’d like to spice it up a bit add a chilli or two. @ Vegans: just as good without the chicken or try replacing with jackfruit

Looks very tasty, and with two teens now self-isolating (due to contacts, not ill themselves) a nice culinary project to keep them from getting bored if I pop out for the ingredients.
Beef in black bean sauce is a family favourite when we order a Chinese.
works equally scrummy, perhaps better, with beef, but the fermented black beans are well worth the investment if you can find them
