Bit of a throw it in the oven and hope for best type of dinner for us tonight…

I diced up some carrots and peppers, chopped up some left over broccoli, put it all in a baking dish and drizzled with olive oil, then put some pork and caramelised onion sausages on top. Currently baking in the oven. Going to have it with some left over roast potatoes that are currently warming up.
