Took me ages to find one that fitted well. As you mention, it’s difficult to find one long enough and I’ve found this to be a fairly common problem with full body garments. I’ve tried a couple of basques/bodies and even the largest chest sizes come up short so they end up being pulled down. Shortening the shoulder straps does little use it seems and just makes them dig in my shoulders more. I guess they’re there more to support any boobs rather than hold up the entire garment? 
As for baby dolls, I’d advise getting as stretchy as possible. Although you/your partner don’t want it skin-tight a babydoll will sit differently and be a little tighter on a man where it ordinarily wouldn’t on a girl. The couple I’ve got….the skirt portion isn’t quite as “floaty” as the website suggested, presumably because my hips and waist are much wider and straighter, and no matter what I try my bum is always more on display than I’d like.
Oh and you’ll probably need to find some fuller knicks. It seems anything that comes with a babydoll set is of the thong variety, mostly I think because baby dolls fall more towards the category of seductive lingerie where having minimal coverage is the idea.
