I was waiting for photo approval before posting, but mince pie trials took place over the weekend.
4 mince meat recipes tested. The diamond and star topped ones took a clear lead. Taking judges comments on board (OH, dad, sister, me), I will take the best qualities of each and create a hybrid version this weekend. Final taste test in 2 more weeks.

Good Housekeeping ‘Juicy and Fruity Mincemeat’: good spice blend, too much orange, needs more suet and acidity.

Great British Chefs ‘Homemade Christmas Mincemeat’: a bit too sweet with toffee undertones, needs more spice, good acidity.
Both need more booze!
