Grilled chicken breast, garlic mash and steamed veg tonight! Had a few cheat meals lately so will be trying to get back into good habits again.
I’m making Chinese curry sauce with salt and pepper chips and egg fried rice tonight. I prefer it homemade than from the takeaway. Plus I get more instead of small portions.
Please tell! Not really a breakfast person - would it make a good brunch?

Today was cooking day.
I made a low-carb coleslaw salad with no mayo but with lots of lemon juice, and this spicy Ethiopian dish: Ethiopian Cabbage - Immaculate Bites
Homemade Chicken & Chorizo pasta, sauce is simmering away as we speak actually!
Oh @MsR it would make a lovely brunch. So a good old fashioned twist on egg and soldiers… Sit down and prepare to dribble
what you need
Cake Baking tray,
Butter
Bread
Eggs
Bacon
(optional) salt, pepper, thyme.
method
Melt some butter in a bowl
Cut the crusts off the bread and dip into the butter, and then slice bacon (Longways) and wrap it around the crust in a spiral. Place in the oven for 15 minutes until bacon is nicely cooked and wrapped around the crust. There’s your soldiers done
Now, onto the eggs. Rub some melted butter into the cake spaces on your tray, and then put a slice of bread into each one. Press it down and slightly add more butter onto the bread, make sure they’re not broken and pressed firmly into the spaces.
Put it into the oven for 5 minutes until bread becomes toasted and firm, and you’ll notice they are like little bread cups. Open an egg into each one and sprinkle some salt and pepper on too, place under the grill for the egg to cook for about 10 minutes, pull out and **voilà **
You have bacon crust soldiers and egg cups. It sounds like a lot of messing about but it isn’t, it’s quite simple and easy. And they taste AMAZING.
At work tonight so having the usual, chicken and rice, sounds boring but I actually enjoy it
