Depending on how far you want to go with it (or real you want to make it), could book a hotel room and only one of you checks in. She’d wear an outfit she feels is appropriate for the fantasy, and order herself a drink or 2 at the bar. You could then approach her, make small talk, indicating you were looking for a good time girl, and agree terms. Whoever booked in would lead the other to the room, have the agreed time, pay the lady, and then leave.
Doing things this way, actions speak louder than words, and allows your OH to take lead for her own fantasy, keeping you guessing - which would be pretty realistic.
